20 mini tartlettes ( we have here in the Cottage already prepared.)
1 t lemon zest plus 1/2T lemon juice
1/4 C granulated sugar
1 C whipping cream
12 small strawberries
1/2 T granulated sugar
Heat Tarts for 5 minutes in 350 oven to make freshly crisp. COOL!
Mix strawberries with 1/2 T sugar. Use medium to small berries. If too large for tart slice.
Beat the cream cheese with an electric mixer at medium speed until smooth. Add the lemon zest, lemon juice, and 1/2 cup granulated sugar, and beat until well blended. Gently fold the whipped cream into cream cheese mixture until incorporated. Spoon the cream cheese mixture into each mini tart shell. Garnish with small berry or with slice. Refrigerate until ready to serve.
