Ingredients:
2 pounds pork tenderloin
1/3 c salt
1 quart of cold water
1/3 c of maple syrup
3 T fresh chopped ginger
3 garlic cloves, crushed
1 T Sonoma Pepper
Directions:
Mix together brine ingredients in bowl. Pour into a bag and place tenderloin in brine. seal bag. Leave in brine 8 to 10 hours.
Remove from bag and pat dry. Prepare grill. Whisk together 3 tablespoon olive oil and 1/3 tablespoon honey in a medium bowl. Add the pork and turn to coat. Put pork on grill for about 25 minutes until the thickest area reaches 145 degrees. Cover the pork with foil and let it rest for 10 minutes. Slice and serve with Blackberry Patch Apple Sauce.
